Yep, I forgot yesterday was Wacky Wednesday and by the time I’d realized it dinner had pretty much been cooked. Whoops!
I’ve had a busy few days and in the hustle and bustle all I could think about was making something easy and healthy. I relied on an old standby since college: brown rice with a curry stir fry. It’s easy to chop up whatever protein is available and stir in whatever veggies are looking a little tired. Steam some brown rice. Mix together and viola!
Not exactly Wacky but definitely yummy and I am happy to say that the kids gobbled it up. Actually, they thought the chicken was tofu and so we all had a good laugh about that.
